Quick Fiber-Packed Black Bean & Corn Salad

This delicious side dish has 10 grams of fiber per serving.

Mix together:

  • 1 cup black beans, drained and rinsed
  • 1 cup corn (thaw first if frozen)
  • 1 chopped bell pepper
  • ¼ cup chopped red onion
  • Juice of 1 lime
  • 1 tablespoon olive oil

Toss and serve chilled.
